Recipe: Veggie Loaf

Many years ago, in a search to find a simple yet similarly traditional veggie loaf, I stumbled across this recipe generator. Simple and effective, the recipe generated here has been a crowd pleaser at many a gathering.


Here's a generated recipe that I have perfected. Tips in brackets.

Dry Ingredients: 
1/4 cup sunflower seeds
1/4 cup almond meal
1 cup uncooked quick oatmeal or oat bran [aka instant]
1 heaping TB flaxseed meal
1/4 tsp. dried thyme
1/2 tsp. dried sage
1/4 cup minced fresh parsley
1/4 tsp. dried oregano
1 tsp. ground cumin
1 tsp. baking powder
2 TB nutritional yeast flakes
Freshly ground black pepper, to taste

Wet Ingredients:
2 TB vegetable oil
1/2 cup vegetable broth
2 TB soy sauce [Bragg's liquid aminos great too]

2 cups cooked garbanzo beans [1 15-ounce can works well too]

Optional Glaze:
3/4 cup ketchup 1/4 cup agave nectar
1/2 tsp cayenne pepper

Directions: Preheat the oven to 350º. Grease a loaf pan. Combine seeds, oatmeal, flaxseed meal and spices in one bowl. Combine oil, broth and soy sauce in another. Pour the garbanzo beans into the dry mixture. Using a potato masher or pestle, crush and roughly combine the garbanzos with the mixture, being careful not to puree, however not leaving too many whole beans either.

Pour the wet ingredients into the mixture and stir well. Pour into greased pan. Combine ketchup, agave and cayenne, pour on top of loaf, and spread using a spoon or brush to create an even layer.

Bake loaf for 1 hour. Cut triangle from center and inspect for doneness. If wet or doughy, bake for another 10 minutes or more.
